Mex Tex Won Tons

Another tasty recipe for all you out there. Enjoy!

Ingredients:
Cooked hamburger meat
Onion
Bell Pepper (I use red, yellow, and green)
Black Olives
Fresh Chopped Garlic
Won Ton Wraps
Small Bowl of Water

*This is a very easy recipe to add, subtract and substitute the ingredients. As you all know, I hardly ever stick with the recipe as it started out. Have fun with it!

Fill a deep skillet with oil. I tend to stick with virgin oil or a light veggie oil. While waiting for the oil to heat, fry up the hamburger meat and chopped up your veggies in to fine, diced peices.

Mix the hamburger and veggies together, spoon into won ton wraps. Careful here, not to spoon in too much. Fold over sides, "glueing" together with a little water on your fingertip.

By now your oil should be ready for these little goodies! Carefully drop them in, frying them on one side until a golden brown and then flipping over (unless your oil is enough to cover completely).


Once completely golden brown, they are done. Let excess oil drip off and cool, then top with favorite topping and Enjoy! I like to top mine with fresh salsa, my kids like to add sour cream.

A New Year

So today is the second of the new year, and it seems I've neglected the blog a bit. Time to try this again!
2011...what a year. Full of ups and many downs, new friends, lost friends, new chapters, chapter endings, regrets, memories. Its been a busy year to say the least. Like "they" say, the only thing that stays the same is that everything changes.










2012, what will you bring to this little small town family?
Have you, fellow reader, made any new year resolutions? Normally I don't, knowing that they usually get tossed aside after a few weeks to be forgotten until the next new year. And normally, the resolutions are just symptoms of a much bigger issue that is easily ignored.
I do anticipate change though with this coming year. And my 2012 motto is one word:
SIMPLICITY

Been a while....

But I'm back now. Got a little bit side-tracked with life--moving, kids, school, work and such. It'll happen. I do plan on being back here more regularly though. Restarting my 365 goal. I have some spring photos of the kiddos to post. For now just one photo.

Day 6, 7,8, and 9 (Project 365)



Ok so I'm a couple days late on this. Had a run-in with a virus that shut down my computer. Then, between losing photos in the system restore and battery issues with the camera, I finally got everything back to where it was!  So here is my POTD for 9/16/09:

This is the McDonalds in Coralville. I waited in the parking lotacross the street for a ride, because my car broke down! It was a Hawkeye home game this weekend, so it was interesting to see all the fans make their stop into McD's before the game.
